š š Healthy Avocado Pasta šš

š“ YOU WILL NEED š“ā
⢠12 ounces of spaghetti
⢠2 ripe avocados, halved, seeded and peeled
⢠1/2 cup fresh basil leaves
⢠2 cloves of garlic
⢠2 teaspoons of lemon juice
⢠salt and pepper, to taste
⢠1/3 of a cup of olive oil
⢠1 cup of cherry tomatoes, halved
⢠1/2 cup of corn kernels, cooked, drained and rinsed
šØ if you don't like corn you can easily replace it with either peas, carrot, greenbeans, mixed veggies etc just follow the same drain and rinse method.
š¾āļø METHOD āļøš¾
⢠in a large pot of boiling salted water, cook pasta until cooked, drain well and set aside mixing through a drizzle or two of olive oil through the cooked pasta to prevent sticking :)
⢠to make the avocado sauce, combine avocado, basil, garlic and lemon juice in a blender or food processor, season with salt and pepper to taste
⢠with the blender running add to the mixture a slow stream of olive oil until emulsified, set aside
⢠in a large bowl, combine pasta, avocado sauce, cherry tomatoes and veggies of choice
š Serve and Enjoy IMMEDIATELY š
