šŸ…šŸœ  Healthy Avocado Pasta  šŸœšŸ…
āœ…šŸ“ YOU WILL NEED šŸ“āœ… • 12 ounces of spaghetti • 2 ripe avocados, halved, seeded and peeled • 1/2 cup fresh basil leaves • 2 cloves of garlic • 2 teaspoons of lemon juice • salt and pepper, to taste • 1/3 of a cup of olive oil • 1 cup of cherry tomatoes, halved • 1/2 cup of corn kernels, cooked, drained and rinsed 🚨 if you don't like corn you can easily replace it with either peas, carrot, greenbeans, mixed veggies etc just follow the same drain and rinse method.
šŸ’¾āœļø METHOD āœļøšŸ’¾ • in a large pot of boiling salted water, cook pasta until cooked, drain well and set aside mixing through a drizzle or two of olive oil through the cooked pasta to prevent sticking :) • to make the avocado sauce, combine avocado, basil, garlic and lemon juice in a blender or food processor, season with salt and pepper to taste • with the blender running add to the mixture a slow stream of olive oil until emulsified, set aside • in a large bowl, combine pasta, avocado sauce, cherry tomatoes and veggies of choice šŸ‘Œ Serve and Enjoy IMMEDIATELY šŸ‘Œ
