Ingredients: 225ml of water 150g of prune purée 3 egg whites 7.5ml of vanilla essence/extract 150g of plain flour 200g of caster suagar 75g of cocoa powder 1&1/2 level tsp baking powder 1/4 level tsp of bicarbonate of soda 1/4 level tsp salt
For the icing (optional):

275g of icing sugar
25g of cocoa powder
50ml of skimmed milk

Preparation Method: 1. Preheat oven to 180C (350F), gas mark 4. Grease and line the base of a 25.5 x 16cm shallow baking tin. 2. To make the cake, beat together the first four ingredients until smooth and light. Add remaining cake ingredients and mix thoroughly.
3. Spread mixture into prepared tin. Bake for about 40 minutes or until firm to touch. Leave the tin to cool completely then cut into 7.5cm squares. 4. To make icing, beat together all the icing ingredients until smooth. Then, spread onto cooled cake. Enjoy this delicious chocolatey snack guilt-free!
