**** Spinach dip ****

1 – 10 oz container of frozen chopped spinach – defrost and squeeze out all the juice or buy fresh spinach and cut thin pieces.
2 – 5 oz cans of sliced water chestnuts – dice into small pieces
2 – 8 oz container of 1% cottage cheese – blend with a handheld blender or in a traditional blender until smooth and creamy
1 – packet Hidden Valley Ranch dry mix packet - I only like Hidden Valley, the cheaper kinds aren’t as tasty
Mix well all ingredients and add salt, pepper and hot pepper if desirable!
I love putting some cheddar cheese and putting it in the oven until golden.

Get some veggies to complement your appetizer.

If you want to give your appetizer a fun look, then buy a round bread. Take some bread put from the centre, but try to leave 1/2 an inch of bread on the sides to avoid spilling .

Diet, whole grain chips and fried bread are great to scoop the spinach dip:)
