15 Minute Pumpkin Pancakes
You will need (6 pancakes) -2 eggs -¼ cup pumpkin puree (canned pumpkin puree or homemade) - 2 tbsp flour -⅛ tsp. cinnamon -oil for the pan To serve -optional toppings eg butter, honey, maple syrup, whipped cream or fruit
Step 1- whisk pumpkin purée, flour, cinnamon and then whisk in eggs one at a time Step 2- place a pan on medium heat and add oil (coconut oil if watching weight) Step 3- pour in some batter Step 4- Cook until golden brown then flip and cook until brown on the other side Step 5- serve with chosen topping!
