Apple Crumble Muffins
13 Ingredients
• cooking spray • 2 cups oat flour • 1 tbsp baking powder • 1/4 tsp salt• 1 cup shredded apple• 1/2 cup honey • 1 egg, beaten • 3/4 cup almond milk• 3 tbsp coconut oil, melted • 1/4 cup coconut oil, softened or melted (for topping)• 1 tsp cinnamon ( topping)• 1/3 cup packed brown sugar (topping)• 1/2 cup oat flour (topping)

Directions
1. Preheat oven to 375 degrees. Coat muffin pans with cooking spray.
2. In a large bowl, combine oat flour, baking powder, and salt. Make a well in the center, and add Apple, honey, egg, almond milk, and 3 tbsp melted coconut oil. Mix gently.
3. To make topping, mix all ingredients and mix into a crumble.
4. Divide batter into 12 muffin tin sand sprinkle with crumble topping. Bake for 30 to 40 minutes until an inserted toothpick comes out clean.

Banana Cream Cheese Stuffed French Toast
10 Ingredients
• 2 slices whole wheat bread • 1/2 a banana • 1 to 2 tbsp low fat cream cheese • 1/2 tbsp honey• cinnamon (optional: nutmeg)• 1 large egg• 2 tbsp milk• tsp vanilla • cooking spray • 1 tbsp toasted almonds, chopped (optional)
