Amazing Roasted Potatoes

Ingredients:

1 bag of potatoes (I use baby gold, but red skins would work too)
Olive oil 
Salt, pepper, garlic salt
Parsley or parmesan (optional)

Preheat oven to 350. Wash and dry potatoes and cut into small-medium size cubes. Put them in a pot of boiling water for 15 minutes. In the meantime spray a baking pan with non stick spray. When the potatoes are done boiling take only a few out at a time & shake them in a strainer to roughen the edges & then transfer to the baking tray. When all potatoes are on the tray make sure they are spread out & not overlapping each other.
Brush an even coat of olive oil onto the potatoes & then sprinkle with salt, pepper and garlic salt - I usually go a bit heavier on the garlic salt. You could also use any other spices you like. Bake at 350 for 1.5 hrs turning them over every 30 mins. Reapply olive oil & seasonings after the first turn. (Optional) add parsley or parmesan for last few minutes of baking. Let cool for a few minutes before serving and enjoy!
