Amish Wedding Chicken In Under An Hour!
posted in All on 7/17/2014

Amish Wedding Chicken is exactly what it sounds like: a traditional chicken dish that is served at Amish weddings and other special occasions! Amish food is wonderful, not just for it's simplicity in preparation but for its bold flavors. Let's get started!

You will need boneless, skinless chicken breasts, blue cheese (or mayo if you prefer), bread crumbs, and shredded white cheese (Parmesan is best, but my family prefers an Italian mix).

Preheat oven to 375 degrees Fahrenheit. Put all ingredients into separate bowls so you don't get raw chicken into a container you might reuse!

Bigger breasts can be cut in half for faster cooking. Cover the breast in blue cheese with a knife (you can roll it in the bowl if you like, but I find this to be too messy). Do both sides!

Then add your breadcrumbs and shredded cheese. Both sides too!

Bake in the oven at 375 degrees Fahrenheit for 30-40 minutes, checking occasionally. If your chicken is not fully cooked but the cheese is starting to get golden, place a sheet of aluminum foil over the pan. This will stop the cheese from getting too brown while still allowing the chicken to cook!

Serve with veggies, rice, or whatever you like! This dish pairs nicely with a Cabernet Sauvignon or a Sauvignon Blanc, if you prefer white wine.
