Baked Pecan-Stuffed Apples
posted in Recipes on 1/10/2015

Tart apples will technically work in this recipe, but I love using sweet apples such as Gala or Honeycrisp. Their flavors shine and are enhanced by the brown sugar and cinnamon.

You definitely want to line the pan with aluminum foil because as the apples cook, the sugar and butter will combine with the apple’s natural juices to create a delicious, gooey mess. Foil makes cleanup a breeze! This is a simple, quick dessert that your entire family will love.
Baked Pecan-Stuffed Apples;
•Yields: 4 servings
•Total Time: 25 minutes
Ingredients:
4 sweet apples, such as gala or honey crisp
2 tablespoons unsalted butter, melted
4 tablespoons dark brown sugar (light brown sugar will also work)
4 tablespoons chopped pecans
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
Directions:
1. Preheat the oven to 400 degrees Fahrenheit and line a roasting pan with aluminum foil.
2. Wash and core the apples and place them in the prepared pan.
In a small bowl, combine the butter, sugar, pecans, cinnamon and salt. Use a small spoon to evenly distribute the mixture into each apple.
3. Bake for 20 minutes, or until the apples are soft but not mushy. Drizzle the apples with the pan drippings.
4. Serve immediately.
