Best Ever Chocolate Cookies!
For years I've tried to find a recipe which isn't too sweet, is soft in the middle and keeps for more than a couple of days. This is the one thanks to my friend!
150g soft unsalted butter 125g soft light brown sugar 100g caster sugar 2 teaspoons vanilla extract 1 whole egg-fridge cold 1 egg yolk-fridge cold 300g flour 1/2 teaspoon bicarbonate of soda 1x326g packet of chocolate chips. I prefer buying milk, dark and white chocolate blocks. Chop each cube into quarters. Gives nice, but pieces throughout the cookies and the colours look prettier!
1. Preheat oven to gas mark 3/170 degrees. Link a baking sheet with parchment paper. 2. Melt the butter and let cool a bit. Beat the sugars into the butter. 3. Beat in the vanilla, egg and egg yolk until light and fluffy. 4. Slowly mix in the flour and bicarbonate. Add the chocolate pieces. 5. Use an ice cream scoop or an American quarter cup to scoop out the cookie dough and plop on the baking tray. Leave about 8cm space apart. Using the ice cream scoop, they bake to a diameter of about 12cm. Bake for 15-17 mins. Leave on a tray to cool for 5 mins before cooking on a wire rack. Enjoy!
