2/3 cup (150 mL) grape jelly 2 tbsp (25 mL) butter or margarine 1 large unpeeled red cooking apple, cut into 2-inch (5 cm) chunks 1 medium stalk celery 1/2 cup (125 mL) fresh or frozen (thawed) cranberries 3/4 cup (175 mL) BISQUICK* mix 1/2 tsp (2 mL) ground sage 3/4 tsp (3 mL) chopped fresh thyme leaves 2 tbsp (25 mL) water 4 boneless, skinless chicken breasts (about 1 1/4 lbs/625 g)
Instructions Heat oven to 350°F (180°C). In 1 1/2 -qt (1.5 L) saucepan, melt jelly and butter over medium heat, stirring occasionally. Stir in apple, celery and cranberries; remove from heat. In shallow dish, mix Bisquick* mix, sage and thyme. In another shallow dish, place water. Dip chicken into water, then coat with Bisquick* mixture. Spray large skillet with non-stick cooking spray; heat over medium-high heat. Cook chicken in skillet 6 to 8 minutes, turning once, until coating is brown. Place chicken in ungreased 9X13-inch (23x33 cm) rectangular baking pan.
