Broccoli And Cauliflower Soup

Really easy and quick to make!
Ingredients: -broccoli and cauliflower (mixed bag from frozen or fresh florets) -leek (instead of onion - leek keeps better and has a less acidic aftertaste, but you can use half and half of both!) -2 large potatoes (quartered) -stock (3 veg and 2 chicken stock cubes) -water -250ml of single cream
Method: - chop leek roughly and put into a pot with a little oil -fry on full heat until the leek is softened, SLIGHTLY browned (keep stirring) -turn the heat down to half and add the broccoli, cauliflower, potatoes and pour water until its about half an inch above the veg, add the stock cubes
-cook until all the veg is cooked and the stock cubes have dissolved -turn the heat off, with a blender, blend the soup until the veg has broken up -pour in the cream a bit at a time and blend each time, and then blend to your preferred consistency
To finish, add some black pepper or parsley and serve with crusty bread. Enjoy! Please like and share! x
