Butterscotch Brownie Bars
BUTTERSCOTCH 1 cup all purpose flour 1/2 tsp baking powder 1/4 tsp salt 1/2 cup butter, softened 1 cup packed brown sugar 2 eggs 1 tsp vanilla 1/2 cup butterscotch chips
CHOCOLATE 3/4 cup all purpose flour 1/4 tsp baking powder 1/4 tsp salt 1/2 cup butter, softened 5 oz. bittersweet chocolate 1 1/2 cup sugar 3 eggs 1 tsp vanilla 1/2 cup bittersweet chocolate chips GANACHE 12 oz. semi-sweet chocolate chips 3/4 cup heavy cream 6 Tbsp butter
Preheat oven to 350 degrees and grease a 9X13 pan. FOR THE BUTTERSCOTCH BATTER: Mix flour, baking powder and salt together in a medium bowl using a wire whisk. Set aside. In a mixer, beat butter, sugar, and vanilla together until creamy. Add eggs and beat until blended. Gradually beat in the flour mixture and then stir in butterscotch chips.
FOR THE CHOCOLATE BATTER: Mix flour, baking powder and salt together in a medium bowl using a wire whisk. Set aside. Melt butter and chocolate in the microwave. Stir together until smooth. Add sugar and stir with a wire whisk until combined. Whisk in eggs and vanilla until combined. Stir in flour mixture until blended and then stir in chocolate chips. Spread chocolate batter in prepared pan. Drop spoonfuls of butterscotch batter on top and use a knife to gently swirl the two together. Don't mix too much.
Bake for 35-40 minutes or until done. If the top starts to get too dark, place a sheet of aluminum foil over the pan for the last 10 minutes. When cool, spread ganache on top. Let set for a few minutes before sprinkling butterscotch chips on top. FOR THE GANACHE: In a small saucepan, heat butter and cream. Remove from heat right before it starts to boil and pour over chocolate chips. Let stand for about 20 seconds and then stir until completely blended and smooth.
