Chocolate Banana Bread

Chocolate Banana Bread
- 1tsp sunflower oil, to grease your loaf tin - 2 ripe bananas (About 225g once peeled) - 2tbsp lemon juice - 175g softened butter (Margarine will work too) - 175g light muscovado sugar - 2 eggs, beaten - 225g self raising flour - 85g honeycomb pieces, plus extra to decorate
- 55g dark chocolate, broken into pieces - 75g white chocolate, broken into pieces 1. Preheat the oven to 180 degrees celsius, no fan 2. Cut the bananas into slices, add the lemon juice and mash up 3. Cream together the butter and sugar until light and fluffy
4. Gradually beat in the eggs, in three parts is about right, adding a little flour after each addition 5. When all the eggs are added, mix in the banana puree and remaining flour 6. Add the honeycomb pieces 7. Heat the dark chocolate until melted and then stir into the mixture
8. Pour into an oiled 900g/2lb loaf tin. It can also be hand to line the base with baking parchment. 9. Bake for 45-55 minutes, or until a skewer comes out completely clean 10. Once it has cooled, melt the white chocolate and drizzle over the top. Finish off with some more honeycomb pieces.
