Cookies โ€˜n Cream Funfetti Bark Ingredients: 12 ounces White Candy Melts or confectionery coating 8 ounces Oreo Bite Size Cookies 2 tablespoons colorful jimmies or sprinkles (or use as many jimmies or sprinkles as you like)
Pour the white candy melts into a microwave safe bowl. Heat it for 30 seconds, then stir. Heat for another 30 seconds, then let the bowl rest in the microwave for a minute or two before stirring vigorously. If needed, continue to heat for 15 second increments, resting a bit, then stirring after each, until melted. Pour the mini Oreos into the melted candy coating and stir just until the cookies are well coated. If you stir too long the candy will begin to harden. If this happens, just pop the bowl back in the microwave for 15 seconds and it should be good.
Pour candy out onto the prepared pan and spread it into an even layer. While the candy is still melted, add some sprinkles. Pop the pan in the freezer for about 10 minutes, until the bark has hardened. Remove from freezer and let it sit at room temperature for at least 30 minutes. Then, break into chunks of any size you like. The candy is now ready to eat. Store any leftover candy in an airtight container for up to a month. I find that storing the candy in a metal tin will keep it the freshest for the longest period of time. You could keep this for up to two months in a tin.
