Dairy, Sugar, And Egg Free Cookies
My son is severely allergic to eggs and milk. So I have to make all his food. I've found simple recipes for different things (like cookies and such) where I can substitute ingredients for safe foods for him. This is my adapted cookie recipe. Enjoy! :)
Critter’s cookies -1-2 cups of flour (I say this because it depends on how ripe the banana you use is and so forth) -1 medium banana (preferably really ripe as it adds to the sweet flavor) -1/2 cup coconut oil -1/4 cup honey -1 teaspoon baking soda -1/2 teaspoon baking powder -1/4 teaspoon salt
- 1 teaspoon vanilla extract (optional-I didn't use any and they still taste awesome) Preheat the oven to 375* F.
I whisked the banana until it was almost completely smooth. It is a bit of work depending on the ripeness of it. I then added in the honey and coconut oil and mixed that until smooth. I added in the baking soda, baking powder, and salt. From there, I added in 1 cup of flour.
Once that was completely mixed in (but still a bit thin) I added flour in until I got a nice thick dough. I then rolled it out and did cute little stars for him. They do better being a tad thick. If not they fall apart easily.
I baked them for 12 minutes. The first batch was done at 10 but they were a little bit under-cooked. So with my good friend Trial-and-Error, I tried 12 minutes and that seems to be the lucky number.
