Easy Homemade Potato Skins

What you need:

8 (3 inch) russet potatoes
2 tablespoons unsalted butter, melted
Kosher salt
Black pepper
2 cups shredded cheddar cheese
1/3 cup sour cream 
2 tablespoons chopped fresh chives
Bacon pieces (optional)

Preheat oven to 400 degrees and place potatoes directly on the oven rack. Bake for 50 minutes or until the skins are sharp. Remove potatoes from oven and let stand 10 minutes. Set oven to broil. Slice each potato in half lengthways and use a spoon to scoop out the inside, leaving 1/4 intact.

Brush the insides of the potatoes with the melted butter and season with salt and pepper. Flip the potatoes over and do the same to the skins. Evenly separate the potatoes on a baking sheet and broil for 2 to 3 minutes on each side.
