Fresh Basil Pesto

Fresh Basil Pesto
I simple, tasty spread that may be used for breads, pasta, soups, and more!
Ingredients: 3 cups fresh basil 2/3 cup extra virgin olive oil 1/2 cup toasted nuts (I used almonds and walnuts but you can use any type you wish!) 2/3 cup grated Parmesan cheese 2-3 cloves minced garlic Salt and pepper to taste Directions: Preheat oven at 350 degrees, toast the nuts on a baking sheet for roughly 5-7 minutes or until golden brown. Set aside to let them cool. In a blender, combine the basil, a little at a time, and a couple tablespoons of olive oil. Once blended, add the nuts, cheese, garlic, and rest of oil and blend until smooth. Add salt & pepper to taste!
I served the pesto with Focaccia bread from Thom's Bread, which I lightly brushed with extra virgin olive oil, and grilled for about 3 minutes on each side. However, this flavorful pesto can be used in a variety of dishes! A wonderful way to use the extra fresh basil growing in your garden! Enjoy!
