Fresh & Fabulous Cucumber Salad

What You'll Need:
- Cucumber
- Cherry or Grape Tomatoes
- Feta Cheese
- Red Onion*
- Italian Dressing**
- Salt and Pepper

**Instead of Italian Dressing you can use equal parts Olive Oil/Lemon Juice

First, know how many people will be eating. If a large group, use a whole cucumber/more than one cucumber. If alone, use 1/4 to 1/2 of a cucumber. Chop into medium sized chunks. (A little bigger than a pair of dice)

Next, slice tomatoes in half or in fourths to match the size of the cucumber. Try to have equal parts of cucumber and tomato.

Now crumble feta cheese all over the top of your tomato and cucumber mixture. I prefer the round Kraft container of Feta.

Red Onions are completely optional. To me they give an amazing taste to the salad. Don't use a big amount if your onion is strong in flavor. Make sure the onion is chopped a lot smaller than the tomatoes and cucumbers.

Use enough dressing to moisten the vegetables and cheese. Usually 1-2 Tbsp. Don't overpower the veggies unless you really want the Italian flavor.

Lastly, sprinkle or grind a small amount of salt and pepper over your salad and mix altogether.

If you want to use the Olive Oil and Lemon Juice mixture instead of Italian Dressing, use a very small amount Olive Oil and the same amount of Lemon Juice. Since Olive Oil is an oil, it will cover the veggies even when using a small amount. The Lemon Juice will give the salad a very fresh taste!
