Good For You Potato & Onion Hotpot w/ Crispy Bacon

Ingredients 2lbs potatoes, peeled and thinly sliced 3 medium sized onions, thinly sliced 4 cups reduced salt stock (vegetable or chicken) Lean bacon rashers (enough to cover the pot you're using)
1. Preheat oven to 375° 2. Arrange a layer of the potato slices followed by a layer of onion slices and so on in a baking dish or casserole dish. Season each layer with pepper, and finish with a layer of potatoes. 3. Pour in the stock. Transfer to the oven and bake for 1 hour.
4. Arrange the bacon rashers on the top and cook for another 15 minutes. The potatoes should be tender, and the top layer of potatoes and the bacon should be crispy. If necessary, finish off with the grill/ broiler.
