Green Mint Tea Ice Pops

4 cups brewed green tea, chilled
Juice of 1 small lemon
2 teaspoons honey
1/4 cup small fresh mint leaves
Special equipment: 12 ice pop molds12 ice pop sticks

Place the green tea in a pitcher and add the lemon juice, honey, and mint leaves. Stir until the honey dissolves. Pour into molds, filling each mold to the top. Insert and ice pop stick into each and freeze for 4 to 6 hours or until firm.
When ready to serve, run the molds under warm water for a few seconds to release the ice pops
