Grilled Toasties - Perfect Tea Time Snack

Ingredients:
4 slices of wholemeal/wholegrain bread ( you can use white if you like)
Chopped or shredded mixed vegetables - green pepper. red pepper, yellow pepper, corn, sun-dried tomatoes, spring onions, lettuce (anything that you fancy, try to opt for vegetables which don't have too much water content, otherwise it gets very soggy)
Pizza sauce or Tomato relish or even Tomato Ketchup
Grated Mozzarella or cheddar cheese
To make the dish hot - use finely chopped green chillies
Method:
Preheat oven grill to 200 degrees for 10 mins.
Toast the bread slices as normal
Spread tomato relish/pizza sauce/tomato ketchup on the toasted slices
Then sprinkle all shredded veggies onto it, garnish with spring onions and grated cheese.
Now place the baking tray inside the oven with toasts on and bake for 10 -12 mins or until the cheese melts evenly.
Increase the grill temperature slightly until the cheese turn golden brown. Keep an eye on the toasts or else they could burn
Sprinkle some oregano and chilli sauce if you like and enjoy
