Healthy Chicken Noodle Soup

1 tbsp olive oil, 2 carrots, peeled and diced
1 celery stalk diced 1 small onion, diced
4 mushrooms, sliced, 2 cloves of garlic, crushed 1 thumb size piece of ginger, grated
1 litre chicken stock, Juice of 1 lime
2 tbsp fresh coriander, chopped 1 medium cooked chicken breast, 100g rice noodles
1) Add the oil to a large pan and then add the carrot, celery, onion and mushrooms and cook for 3 minutes.
2) Add the rest of the ingredients and simmer for 10 minutes
