How To Make Zucchini And Squash Casserole To Top Buttered Pasta

You will need:

2 medium sized zucchini
2 medium sized yellow squash
1 medium sized yellow onion
1 pound shredded cheese
29oz petite diced tomatoes
8oz tomato sauce
salt & pepper to taste

For pasta:

1 pound pasta of your choice
4 tablespoons butter

Preheat oven to 375 degrees. Lightly grease, or use cooking spray, a 7x11 baking dish. Thinly slice squash & zucchini into strips and roughly chop onions. Layer baking dish with 1/2 of the squash & zucchini. Next, layer 1/2 of the chopped onion and 1/2 of the petite diced tomatoes. Then, sprinkle with cheese & add salt and pepper as desired. Repeat process one more time. Cover & bake for 30-40 minutes.
In a medium size pot boil water for pasta.
When water is at a boil, add pasta. Occasionally stirring, cook pasta 10-15 minutes. Drain & shock pasta with cold water. Add 4 tablespoons of butter to pot & add pasta to butter, occasionally stirring, to reheat for 5 minutes.

To serve: Put serving of pasta on plate, top with casserole. If desired add extra shredded cheese on top of it all. All that's left to do is ENJOY!!!
