Lemon Coconut Cookies

Makes approx. 4 dozen cookies. This would be ideal for a bake sale.

Ingredients: 1 1/2 sticks butter, softened 3/4 cup light brown sugar, packed 1/4 cup white sugar 1 - 3.4 oz package Lemon Instant Pudding Mix 2 eggs 1 teaspoon pure lemon extract 1 teaspoon pure vanilla extract 1 teaspoon baking soda 2 1/4 cups all purpose flour 1 large lemon, zest
1 cup Baker's Angel Flake Sweetened coconut Directions: Preheat oven to 350•. In large bowl, cream butter & sugars together. Add pudding mix and continue to beat until blended. Add eggs, lemon & vanilla extracts. Slowly add flour & baking soda until blended. Gently fold in lemon zest and
shredded coconut. Using small cookie scoop, scoop dough onto cookie sheet. Bake 10- 11 minutes. Cool on cookie sheet 1 minute and transfer to cooling rack.
