Maple-macadamia Cookie & Coconut-mango Ice-cream Sandwiches Recipe! #tipit

Ingredients
¾ cup macadamia meal (ground macadamias)
1 + ¾ cup coconut
1 cup oat flour (ground oats)
2 eggs
½ + ¼ cup pure maple syrup
1 tablespoon ground ginger
1 teaspoon nutmeg
1 mango + 1 banana, diced and frozen
1 cup coconut cream, nearly frozen
1 tablespoon vanilla bean extract
Directions
For the cookies, combine oat flour, 1 cup coconut, macadamia meal, eggs, 1/3 cup maple syrup, ginger and nutmeg in a food processor until mix comes together.
Roll about a heaped teaspoon of mixture into a ball, flatten in your palm and place on the baking tray. Repeat with remaining mixture.
Bake in a moderate oven for about 15 – 20 minutes, or until golden and firm to touch.
For the ice cream, combine frozen fruit, coconut cream, remaining coconut and vanilla bean extract until smooth. The texture will be a bit like soft serve.
Pour mixture into a cling wrap lined (this will help you pull it out easily) brownie tray. Set in the freezer until firm, but not solid.
Using a cookie-cutter, cut out rounds of the ice cream and sandwich them between the cookies. Make sure they are cooled first.
