Mini *Healthy* Pizza English Muffins

Ingredients:

1. Plain English Muffins (I use wheat to be a little healthier)
2. Pizza sauce of your choice
3. Mozzarella cheese
4. Italian blend cheese
5. Parmesan cheese, grated (optional)
6. Oregano and Basil, crushed (optional) 
7. Pepperoni, torn into pieces or left whole
Ingredients:

1. Plain English Muffins (I use wheat to be a little healthier)
2. Pizza sauce of your choice
3. Mozzarella cheese
4. Italian blend cheese
5. Parmesan cheese, grated (optional)
6. Oregano and Basil, crushed (optional)
7. Pepperoni, torn into pieces or left whole
How to: 1. Place the English muffins on a baking sheet (or something similar for their going in the oven). 2. Add the pizza sauce, cheeses and garnishes in the order of the ingredients. 3. Place in the oven on broil for about 10 minutes, but keep an eye on them. (If you want the "crust" to be more crunchy, leave them in the oven a little longer). They turn out amazingly delicious! They literally take a couple minutes or less to put together and just the waiting time for them to cook.
Variation: Instead of the traditional pizza, you could put on Alfredo sauce (white sauce), the same cheeses as in the ingredients list, and grilled chicken (in very small pieces). This would be a little healthier since you're replacing the pepperoni with the grilled chicken 😉
