Mom's Chile Relleno!!!

She finally taught me how to make these today! ^_^
Ingredients:
8 green bell peppers
9 eggs
2 small packets of Queso Fresco
1 onion
2 tomatoes
2 garlic cloves
Oil
Oregano
Salt and pepper
The Chile (the bell pepper):
Roast the bell pepper on open flame until black on all sides. Place in plastic bag and cover with towel (so it'll sweat and continue cooking). Let stand for 3 to 4 min.
Run the bell pepper under cold water to clean off all the burnt skin....
.... Slice the bell pepper open on one side. Remove all the seeds and the stem. Place cleaned bell peppers on paper towel and let dry.
Fill bell peppers with stuffing and roll them close (like a rolled taco).
The Stuffing:
Shred the Queso in a bowl. Cut up about 1/3 of the onion. Mix together.
The batter:
Separate egg whites from yolk (keep yolk). Blend egg whites until fluffy (5 to 8 min). Egg whites need to be really fluffy or it won't stick to bell pepper. Once fluffy blend in the yolks.
Place oil in a pan and let warm up (enough oil to fry up the bell pepper 3 to 4 cups)....
.... Dip stuffed bell peppers in batter and cover completely. Then place bell peppers in the hot oil. Splash oil on the top of bell pepper to fry it. Flip bell pepper. Once golden brown place on paper towel to dry.
The sauce:
Cut up tomatoes into 4 pieces. Cut up rest of the onion into for pieces. Throw tomato, onion and garlic into pan. Cover with water and bring to a boil.
Place in blender add about a tablespoon of oregano and a pinch of salt and pepper. Blend...
... In a large pan ( to fit the bell peppers and sauce) put about 1/2 cup of oil. Then pour blended sauce into pan. Let simmer.
Place all bell pepper in the pan with the sauce. Making sure to cover bell peppers in sauce.
Turn fire off and they're ready to eat! :)
That's all of it! Seems really long written out but it's really easy to make and super delicious.
These are all my mom's ingredients. You don't need to put onion in the cheese and most people like to use Monterey Jack cheese but my mom likes Queso Fresco.
