POACHED EGGS & TOMATO SALAD

INGREDIENTS:
2 eggs
boiling water to poach
vinegar
2 tomatoes
1 avocado
several basil leaves
olive oil
salt and pepper
METHOD:
Boil water (approx 2-3 cups). Once boiled add a capful of vinegar to assist in the poaching process. Stir the boiling water to create a current and crack the eggs in, one by one.
Allow to cook to your liking.
To prepare the tomato salad, chop tomatoes, avocado, basil leaves and combine. Drizzle with olive oil and a dash of vinegar, then season with salt and pepper before tossing.
