Panda Express Beef And Broccoli Hack

STEP 1: BEEF MARINATE
Prepare the meat at least an hour before you plan on serving the dish.
Slice 1 lb of flank steak into thin, bite size pieces. Put it in a large, air tight container and add these:
1/2 cup water
1/2 tsp salt
Pinch of white pepper
1 whole egg
4 tbsp cornstarch
2 tbsp salad oil (canola, vegetable or light olive oil)
Once all these ingredients are added, mix it well using your hands. Put the beef in the fridge for at least 30mins.
STEP 2: BASE SAUCE
Make the base sauce by combining these:
2 tbsp oyster sauce
2 tbsp soy sauce
6 tbsp of water
A pinch of salt
Mix well then set aside.
STEP 3: CORNSTARCH MIXTURE
Prepare the thickening ingredient by mixing equal parts of cornstarch and water. The amount is up to you depending on how thick you want your sauce to be. A good starting point is 5 tbsp cornstarch and 5 tbsp of water. Set aside.
Extra tip: if you're also making the Orange Chicken hack from my other tip, you can double up my suggested measurement more as both recipes use this.
STEP 4: TIME TO COOK
When your beef is just about ready, boil 5 cups of water. Once it starts boiling, blanch 2 cups of broccoli florets in it for about 30 seconds. Drain and set aside.
In a separate wok, heat up 2 tbsp of cooking oil. Sauté 1 tbsp of minced garlic and add the beef. When the beef is cooker, add the base sauce. Add the cornstarch mixture 1 tbsp at a time until desired thickness is achieved. Add broccoli. If desired, add a tbsp of sesame oil for added aroma and flavor.
