Pecan Coconut Granola
3 cups oats 1/4 cup Zulka Morena® Pure Cane Sugar 1/4 cup honey 1 cup grated coconut 1/2 cup coconut oil 1 tablespoon molasses 1 teaspoon cinnamon 1 teaspoon vanilla 2 cups pecans, diced 2 cups dried cranberries
Preheat oven to 325 degrees. In a large bowl, add oats, honey, vanilla, molasses, pecans, coconut oil, grated coconut, sugar, and cinnamon, mix well. Place granola on cookie sheet and bake for about 25 minutes, stirring every 5 minutes to brown evenly. Remove granola from oven and allow to cool 30 minutes. Fold in dried cranberries, mix well, and store in an airtight container.
