Pecan Pie Cookies

Ingredients for filling:
1/4c butter
1/2 powdered sugar
3 tablespoons light corn syrup
3/4c finely chopped pecans
Cinnamon, nutmeg and ginger to taste
Ingredients for cookie dough:
1c brown sugar
3/4c butter
1egg
1teaspoon vanilla
1teaspoon baking powder
3 cups flour
In a saucepan, melt butter and add powdered sugar, corn syrup, cinnamon, nutmeg and ginger. Whisk until smooth. Mix in pecans and set aside.
In a large bowl, beat brown sugar and butter until smooth, about 2 minutes. Add 1 egg and 1 teaspoon vanilla and beat. Sift together flour and baking powder and then slowly add to butter mixture. If dough is still sticky at the end, you can add a little more flour until it is pliable.
Preheat oven to 350 degrees.
In a mini muffin pan, start rolling balls of dough, about a tablespoon in each well. Using your fingers, press the dough around the edges of the pan so that it covers the bottom and goes all the way up the sides but has a deep indentation in the middle.
Spoon a little pecan filling into the indentation of each cookie. Careful not to fill them too much as the filling will bubble up a little bit.
Place in oven and bake for 8-10 min or until cookie crust is golden brown.
