Pizza Baked Potato Skins

Ingredients: 4 medium russet potatoes, washed and dried well Smart Balance® Non-Stick Cooking Spray salt, to taste 3/4 cup reduced sodium marinara sauce, warmed 1 cup part-skim mozzarella cheese, shredded oregano, to taste
Preheat the oven to 400 F. Place the potatoes on a large baking tray. Bake the potatoes for 40 to 50 minutes or until softened. Remove from the oven and let the potatoes cool slightly. Cut each potato in half and scoop out the flesh, leaving about 1/4-inch of the potato skin.
Spray the potato skins with cooking spray and season with salt. Bake skins for 8 to 10 minutes on each side until they are crisp; remove from the oven. Fill each skin with about 2 tablespoons of reduced-sodium marinara sauce, then top each with 2 tablespoons of shredded mozzarella cheese and oregano
Bake 10 to 12 minutes or until the cheese has melted. Serve hot.
