Easy and healthy autumn breakfast

Ingredients:
1/2c quick oats1/8tsp ground ginger1/8tsp ground nutmeg1/4tsp ground cinnamon1/2TBSP brown sugar1/2c canned pure pumpkin 1 egg1/2tsp vanilla extractNonstick spray

Directions:
In a bowl, combine oats, ginger, nutmeg, cinnamon, and sugar. In a small bowl, beat egg and vanilla together. Add to oatmeal mixture, thoroughly combine. Add pumpkin to egg and oatmeal mixture, thoroughly combine. Let sit 5 minutes.

Heat a nonstick skillet over medium heat. Spray with nonstick spray. Once skillet is hot, create 4 pumpkin pancakes as best you can. They don't need to be pretty in shape. Cook aprox 3 minutes on each side.
