Roasted Ranch Potatoes with Bacon & Cheddar Cheese

Ingredients. 2 pounds potatoes; unpeeled 1/2 cup ranch dressing; (bottled) 1/4 cup shredded cheddar cheese; plus more for topping (if desired) 1/4 cup bacon; cooked & crumbled 1 tablespoon dried dill 3 scallions, chopped salt & ground black pepper; to taste olive oil; or nonstick cooking spray
Preparation Preheat oven to 350 degrees. Wash potatoes and cut into chunks. Combine in large bowl: ranch dressing, dill, cheese and bacon. Add potatoes. Sprinkle in salt and pepper. Toss to coat potatoes. Grease a 9 x 13" baking dish with olive oil or cooking spray. Spoon in the potatoes and cover with foil. Bake for 60 minutes. Stir gently halfway through to get bottom potatoes rotated to top so they don't get burnt and to ensure even cooking & browning.
Remove foil. Raise oven temperature to 400F. Gently stir again, if necessary. Bake for additional 15 minutes, then sprinkle on a little more cheese, if desired. Bake a few more minutes or until everything is melty, browned and bubbly on top. Serve with scallions sprinkled on top for garnish. A dollop of sour cream atop each portion is wonderful, or a little extra ranch dressing to dip in.
