Skinny Mac & Alfredo

2 cups whole grain penne pasta, uncooked
1-10 oz jar light Alfredo sauce
1-10 oz package frozen chopped spinach, thawed & well drained
1 cup low fat cottage cheese
1/4 cup skim milk
1 tbsp light butter, melted
1 tsp garlic, minced
1/4 dried basil
1 egg
1/2 cup part-skim, shredded mozzarella cheese

1/2 cup part-skim, shredded mozzarella cheese
1. Preheat your oven to 450 2. Coat a 9x9 inch baking dish with nonstick cooking spray 3. Cook pasta. Drain & rinse in cold water. Drain again 4. In a large bowl, whisk together Alfredo sauce, drained spinach, cottage cheese, milk, butter and garlic 5. Add pasta, & mix really well
6. Blend in egg & basil. Mix well together 7. Transfer pasta to baking dish 8. Sprinkle the top evenly with mozzarella cheese 9. Bake casserole for 25 min until golden brown 10. Let casserole rest for 10 minutes
