Here’s an easy and delicious twist to a plain baked potato – these were a huge dinner success at my house. You can customize the toppings to what each person in your family likes (great way to use up any leftover ham from the holidays!).

Sliced Baked Potatoes Ingredients: 1 large potato (I used a Russet) 1 teaspoon coconut oil or olive oil Salt and pepper to taste Toppings of your choice like fresh herbs, cheese, bacon, ham, green onion etc.
Slice potatoes widthwise about 3/4 of the way down. Be careful not to slice all the way through the bottom. Slather oil all over potato; add salt and pepper. Bake at 400 degrees for about 45 minutes.
Take out of the oven and place cheese in between slices or any of the topping(s) of your choosing and bake for another 15 minutes to melt. I love how these turn out crispy around the edges and soft in the middle. Such a simple idea that’ll have you craving a baked potato!
