Serves 12 Ingredients: 2 lbs extra lean beef stew meat 2 (15 oz) cans fat-free enchilada sauce 1 Tbsp pepper 1 Tbsp garlic powder 2 beef bouillon cubes, dissolved in 1-2 Tbsp of warm water
1 cup fat-free refried beans 12 small flour tortillas 1 cup reduced fat shredded cheddar cheese Instructions: In a large slow cooker stir to combine beef stew meat, enchilada sauce, pepper, garlic powder, and dissolved bouillon cubes. Cover and cook on low for 7-8 hours or until meat is tender.
When ready to eat: Preheat oven to 350 Spray a large casserole dish with non stick spray Spread about 1 cup of sauce from the slow cooker on the bottom of the pan, making sure not to get any meat Heat tortillas for a few seconds to make them pliable
On the tortilla layer 1- 1 1/2 Tbsp of refried beans and meat with a little sauce, roll tortilla and place face down in the prepared casserole dish Repeat with the remaining tortillas Ladle remaining sauce over the top of the burritos and them sprinkle cheese over the top
Bake for 15-20 minutes or until cheese is melted and sauce is bubbly Let stand for 5 minutes then serve Top each burrito with 2 tsp reduced fat sour cream and fresh cilantro
