Spicy Black Bean Soup!

You will need....
6 cans of black beans (8oz each)
1/2 cup of cilantro
4 cups of chicken broth
1 large red pepper
1 medium onion
Sour Cream
Cayenne pepper
Cumin
Oregano
Salt
Pepper
Jalapeños
Olive oil
Directions
1. Place a large pot on the stove with 3 tablespoons of olive oil.
2. After the oil is slightly heated add diced onions to the pot and let sit for a minute or two, then throw in your red pepper and also let sit for 1-2 minutes.
3. After your ingredients are slightly cooked add 3-4 cups of chicken broth to your pot.
4. Add 6 cans of black beans and half a cup of jalapeños.
5. Now add your seasoning. 1 tsp of cayenne pepper and 4 Tbs of cilantro. 2 Tbs of cumin and 1 tsp of oregano. Add 1 tsp of salt and 1/2 tsp of black pepper.

6. Mix your ingredients in the pot and place a top on your pot. Let the soup simmer for about 10-15 minutes.
7. After you have let the soup simmer take half of the soup out of the pot. Then blend the soup in a blender so it can give the soup its thick consistency.
8. After blending half of the soup place it back in the pot and put the top on and let it simmer for about 5 mins.
9. While waiting for the soup to finish cut up the rest of the cilantro and mix it with 2 cups of sour cream and 3 Tbs of jalapeños.
10. When the soup is finished add a Tbs of the sour cream mixture to each bowl of soup! Then Enjoy!
