Spicy Buffalo Burger

INGREDIENTS: 2 tablespoon(s) lowfat Greek yogurt 1 tablespoon(s) white wine vinegar Kosher salt and pepper 3 stalks celery, thinly sliced 2 ounce(s) crumbled blue cheese (½ cup) 1 scallion, chopped 1/4 cup(s) fresh flat-leaf parsley, chopped 1 1/4 pound(s) ground chuck 4 hamburger buns 4 piece(s) iceberg lettuce 1/4 cup(s) buffalo wing sauce
DIRECTIONS: Heat grill to medium-high. Whisk together yogurt, vinegar and ¼ tsp each salt and pepper. Add the celery, blue cheese, scallion and parsley, and toss to combine. Gently form beef into 4 balls. (Don't overwork the meat—this can result in a tough, dry burger). Flatten each ball into a 3/4-in.-thick patty. Using your thumb, make a shallow 1½-in.-wide indent in the top of each patty. Season the patties with ½ tsp each salt and pepper.
Lightly oil the grill. Place the patties on the grill, indent-side facing up, and cook until the burgers release easily from the grill, 4 to 5 minutes. Flip and cook 4 to 5 minutes more for medium. Form burgers with buns, lettuce, meat, buffalo wing sauce and celery slaw.
