Vegan Oreo Chocolate Cake🎂
posted in Recipes on 2/12/2016

For any vegans out there, or those with dairy allergies, it's pretty well known Oreos are vegan (and thank god). If you didn't know that, well this must be music to your ears! Cake, on the other hand, isn't vegan. But we can make it so, and it will be delicious.
This recipe comes from picklesandhoney.com and you should definitely check it out for more amazing recipes (after you like the tip of course😉)
Enjoy!😋
INGREDIENTS
for the chocolate cake:
1¼ cups almond milk
6 ounces non-dairy vanilla yogurt
5½ tablespoons melted coconut oil, plus additional for greasing the pan
½ cup + 2 tablespoons coconut sugar
¾ teaspoon vanilla extract
1½ cups all-purpose flour, sifted
1 cup raw cacao powder (or cocoa powder), sifted
1 teaspoon baking soda
½ teaspoon fine grain sea salt
for the cookies and cream frosting:
1 can (14 oz) coconut cream, refrigerated overnight
¼ cup vegan powdered sugar (or 1-2 packets powdered stevia)
6 Oreo cookies, roughly crushed, plus additional for decorating

NOTES
It's crucial to only use the solid coconut cream to make the frosting and not the liquid or else your frosting will be runny. Sometimes the amount of solid coconut cream varies from can to can, so it's a good idea to have an extra can on hand in the fridge in case you need it. I usually buy my coconut cream at Trader Joe's.
Leftover cake should be covered and refrigerated.
