12 Minute, Gluten Free, Super Easy, No Bake Chocolate Oatmeal Cookies - W/ Variations

What you need: • 3 cups of quick rolled oats • 1 cup chocolate chips (semi or dark) • 1/3 cup unsweetened coconut flakes (optional) • 1 tsp vanilla extract • 8 tbsp butter • 1/2 cup milk or almond milk • 1 1/2 cups of sugar Mix butter, milk and sugar in a sauce pan. Boil for 1 minute. Turn off the stove. Add chocolate chips, oats and vanilla. Stir till combined. Roll a spoonful of mixture in the coconut, then drop them on wax paper to set.
Variations Nutty option: For a little crunch, add 1/3 cup of almonds, pecans or walnuts No chocolate chips, no problem: Try rough chopping your favourite chocolate bar instead. For a healthy option, use carob chips. They are low in fat, high in fibre and caffeine free Brown sugar: Substitute brown sugar instead of white sugar for a slightly more molasses flavour Not coo coo for coconut: Skip the coconut and add some nut butter to the mix instead, almond butter or peanut butter Extra flavour: Add 1 1/2 tsp of your favourite extract to the basic mixture, mint, orange or almond works!
