Fried Spring Rolls
Ingredients:
1 small carrot
4 dried shiitake mushrooms
1 pc canned bamboo shoots
1/2 Chinese cabbage
2 cups bean sprouts
1 cup sliced pork (julienne)
1 tbsp. spring onions
1 tsp. + 1/2 tsp. sesame oil
3-4 tsp. soy sauce
1tsp cooking wine
2 tsp corn starch
2.5 tbsp. vegetable oil
3-4 cups vegetable oil for frying.
1/2 cup water
1 pack spring roll wrapper
1 egg slightly beaten
Procedure:
Julienne all vegetables. In small bowl combine and mix together raw pork, spring onions, 1tsp soy sauce, cooking wine, 1/2 tsp sesame oil and 1 tsp corn starch.
In a hot pan sauté the pork in 1 tbsp of vegetable oil. Sauté the pork till 3/4 cooked take out of pan set aside in a bowl.
Then in same pan sauté all vegetables 1.5 tbsp oil, season with remaining soy sauce, sesame oil, add pork and combine with some water to taste. Cool and drain sautéed vegetables. Wrap the vegetables in spring roll wrapper seal spring rolls with scrambles raw egg. Fry rolls till golden brown.
