posted in Recipes on 8/27/2014

If you want to make this with some great Moroccan spiced potatoes, simply dice the potatoes and add to the pan about 45 minutes before serving.
2 cloves Garlic sliced
½ Onion diced
1/3 cup White Wine Vinegar
Juice and Zest of ½ Orange
Juice and Zest of ½ Lemon
½ tsp of Allspice
1 tsp Cumin
1 tsp Paprika
1 tsp Coriander
Pinch of Cinnamon
Pinch of Cloves
Pinch of Cardamom
½ tsp dried Dill
½ tsp Salt
½ tsp Ground Black Pepper
1 Tbsp Olive Oil
2 Country Style Pork Ribs
Corn Tortillas
Combine all of the ingredients besides pork and tortillas, in a coverable bowl and mix thoroughly. Place the pork and marinate for at least 3 hours, overnight is preferable.
In a deep, coverable frying pan, sear the pork in olive oil over medium high heat and let brown.
Add the marinade and cover.
Bring to a slow boil and then lower heat to medium low and let simmer for 3 hours. After three hours take two forks and shred the pork.
Optional: Add some green vegetables (spinach, snow peas, other greens) and tomatoes to the pan about 25 minutes before serving and serve with the pork. Wrap the pork and veggies in the tortillas and serve. Can be served with hummus for a yummy low calorie-high protein meal.
