Quick And Delicious Egg Salad

Crack 2 free range eggs into a bowl, along with thin slices of bacon. Make sure all of the fat is removed from the meat before adding.

Finely chop a clove of garlic, and cut the pepper into small chunks. Add these to the mixture.

Chop the cucumber, lettuce, spring onion and red onion and place in a separate bowl. Remember 5cm of cucumber counts

Pour the egg, bacon, garlic and pepper mix into a pan, and fry lightly with a splash of olive oil. Fry until the eggs and bacon are cooked thoroughly.

Once cooked, add the mix to the salad and season with a sprinkle of salt and a splash of balsamic vinegar. Quick and simple salad, that is delicious and good for your body!
