Super Easy Black Beans And Rice!!

1 teaspoon olive oil
1 onion, chopped
2 cloves garlic, minced
3/4 cup cooked rice (brown or white)
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
2 cans black beans, drained and rinsed
1 teaspoon fresh parsley ( can use dried)
salt and pepper to taste
Brown onion and garlic in olive oil.
Add cayenne pepper, salt and pepper, cumin, and rice.
Mix it all well.
Stir in black beans and cook until completely warm.
**I used Minute Rice, even quicker!!!
**I also adjusted the amount of rice/bean ration, using much more rice.
Great flavor and even my 9 yr old requests this one!!!
