Vegan Fudgesicles

Vegan Fudgesicles
Ingredients 3 cups soy milk (or almond milk, etc.) 1 avocado, cut into chunks 1/4 cup honey (use agave to make vegan) 4 Tbsp. unsweetened cocoa powder 2 tsp. vanilla extract
Directions Place all ingredients in a blender, and blend on low speed until mixture is smooth. Pour into popsicle molds and freeze for about 6 hours. To remove fudgesicles, run the mold under warm water for a few seconds and they will slide right out.
Note: we have smaller popsicle molds, so this recipe makes about 8 fudgesicles for us. If you have larger ones, it'll be a little less. Feel free to tweak the ingredients to suit your taste!
