Cream Cheese Spinach Dip

Ingredients
1 medium size onion
1 big package of frozen spinach
2 tsp of chopped garlic or 4 garlic cloves chopped
1 cup Parmesan cheese
1 package of cream cheese (8oz)
2 tbsp butter
1 cup milk
1/4 oil
Flour
Pepper to taste

Chop onion (and garlic if necessary). In a medium non-stick frying pan heat 1/4 of oil and sauté just the onions until translucent. Add garlic and cook for about 2 minutes making sure it does not burn. Then add entire package of frozen spinach, lower heat to low.

In separate saucepan add the butter and cream cheese cut into squares. Slowly add milk, bring to a boil.Lower heat and add the Parmesan cheese and whisk making sure it is all dissolved and mixed properly. Slowly add flour and whisk. (The mixture may taste a little salty due to the cheese)
The spinach should be all soft by this point. Add some pepper for taste (NO SALT). Slowly add the cream cheese mixture to your spinach and mix until its all covered. At this point it should not be salty and the cheese sauce should be of pancake batter consistency when pouring.
Bake in the oven uncovered at 350 for 20 minutes before serving. Enjoy with Tostito chips, veggie sticks or on some toasted cut Italian bread!
