Ingredients for Arctic Char 2 pieces (generally 12-14 oz total) of Arctic Char or Salmon with the skin on 1 tbl butter 1 tbl EVOO Old Bay Salt and Pepper Cayenne Pepper Soyaki from Trader Joe's
Marinate the fish minimum 20 min skin side up in 1/3 c of Soyaki After fish has marinated, heat skillet over med heat Add oil & butter Remove from marinade Skin side down, sprinkle top with spices Add to pan skin side down Do not flip Spoon oil/butter on top until cooked through and skin is crispy
Ingredients for Creamed Corn 1 package frozen sweet corn 1 c heavy cream 2 tbl butter 1/4 tbl Turmeric Salt and pepper Small Onion diced 2-3 jalapeños diced with seeds 1 tbl sugar 2 tbl of corn meal Hot sauce Sprig of rosemary or thyme
Heat pot on med Add butter and let melt Add onion and jalapeños and let sweat Stir in corn, herbs, spices, and sugar Let it cook until corn is soft stirring occasionally Stir in cream and cook for 2 min Stir in corn meal and cook for 5 more min Add salt, pepper, and hot sauce to taste
Ingredients for Asparagus and Biscuits 1 bunch of asparagus or frozen package EVOO 3 cloves of chopped fresh garlic *alter depending on preference* 1/2 a lemon Parmesan cheese Salt & Pepper 1 can of ready to bake biscuits *whichever brand you prefer* 2 tbl of butter 1.5 tbl of honey or agave nectar
Heat skillet on med Add EVOO and garlic cook until fragrant Add asparagus cook until bright green and tender Add salt, pepper, and lemon to taste Remove from skillet and add parmesan to taste
Prepare biscuits as directed on package In a small pot, melt butter on low Stir in honey and turn off heat During last 3 min of baking, remove biscuits from oven and brush on honey-butter mixture Return to oven to finish baking When they're done, split open and add honey-butter mixture
